Sweet Blueberry Muffins Recipe

Makes: 12 muffins
Total Time: 35 minutes
This super simple recipe was given to me from a family friend. I was super excited to make these for my family! You'll want to add in the blueberries while mixing in the remaining ingredients. Also, to make sugar-crusted muffins (which I've seen called sparkling muffins) you'll want to use coarse sugar sprinkles. I did not use these, so in some pictures you will see regular sugar on top. Don't overmix the batter!

Ingredients
1 egg
1/2 cup milk
1/4 cup salad oil (or any oil)
1 1/2 cups all-purpose flour*
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
Directions
Heat oven to 400°. Grease bottoms of 12 medium muffin cups (2 3/4 inches in diameter). Beat egg; stir in milk
and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.
Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown. Immediately remove from
pan.

*If using self-rising flour, omit baking powder and salt.
